Southeast Texas vendors gear up to serve Cajun cuisine at Beaumont's Mardi Gras celebration

Woogies Sandwich Shop and Carter's Country Cookin' are just some of the few food vendors that will be at Beaumont's Mardi Gras celebration.

BEAUMONT, Texas — Southeast Texans can expect some tasty Cajun cuisine at the Mardi Gras celebration in Beaumont this weekend. 

Some of those food vendors include Woogies Sandwich Shop and Carter's Country Cookin'

Owner of Woogies Sandwich Shop Candi Rutledge is excited for everyone to try their 'Swamp Thing' sandwich, which is packed full of surprises. 

"That's our number one selling sandwich, "Rutledge said. "We start out with a fried French bread; we fry it, of course, in-house, jalapeno mayonnaise; which is in-house made, mustard, three different kinds of chees,  roast beef and étouffée," Rutledge said. 

If you're looking for something a bit different, crawfish étouffée smothered over a bed of crispy tortilla chips from Carter's Country Cookin' is another option. 

And of course, you can't forget the cheese. The owner of Carter's Country Cookin, Trish Carter, says the more, the better.

"Our crawfish nachos, we do those, are unique, We also have brisket quesadillas and I don't think anybody else offers those," Carter said.

For Carter, this will be her sixth year at Mardi Gras after hearing about it from a friend 

"Rudy had told us 'Y'all need to get into Mardi Gras it's a good festival you'll like it.' We got into it and it is a good festival," Carter said. 

For Rutledge, this will be her third year apart of Mardi Gras and it's helped bring in more business. 

"It puts a smile on your face because people know us, and they know our quality of food and they know what to expect from us," Rutledge said. 

Rutledge says they also have another sandwich called 'The Beast', which is almost identical to 'The Swamp Thing' but has ham and gravy instead.
